Ingredients
- 180g/ 1 ½ cups Ground Chia Seeds
- 3g/1 tsp Salt
- 20g/ 2 tbsp Avocado, Coconut or Olive Oil
- 220g/ 1 cup Boiling Water
Directions
- 1. Add all the ingredients to a bowl with the water added last. Mix first with a spatula and then knead the dough when its cooler to the touch so that all the ingredients are fully incorporated.
- 2. Separate the dough into 5 equal parts, then roll out each between 2 sheets of parchment or baking paper. You can tidy the edges by pressing a potlid into the tortilla, then trim the edges.
- 3. Fry each tortilla on a medium heat, until slightly brown. They will shrink by about half an inch in size. Optionally you may wish to coat the pan in butter, but I found they turned out well without.

This tortilla recipe is keto, low carb, vegan, diabetic friendly, dairy and nut free. It also uses products that have a long shelf life. To store do wrap them as they tend to dry at the edges slightly.
I found really low carb ground chia seed option (better than mine). It's in my Amazon Store in the Grocery section.
