Ingredients
- 150g/ 1 ½ cups Oat Fiber
- 80g/ ½ cup + 1 tsp Flaxseed Powder/Meal
- 33g/ 3 tbsp Psyllium Husk Powder
- 17g/ 1 tsp + 1 tbsp Baking Powder
- 5g/ 1 tsp salt
- 30g/2 tbsp Sweetener
- 7g/ 2 tsp Instant Dried Yeast
- 274g/ 5 Eggs at room temp
- 380g/400ml/1 + ¼ cups lukewarm water
- 50g/ ¼ cup White Vinegar
- 5g/ 1 tsp Keto Approved Oil
Directions
- 1. Preheat the oven temperature to 350F or 176C. Add the oat fiber to a large bowl. Remove 1 tablespoon and 1 teaspoon of the oat fiber and set aside for the topping.
- 2. To the large bowl, add the flaxseed powder, psyllium husk powder, baking powder and salt.
- 3. Remove 1 teaspoon of the sweetener and add to the oat fiber for the topping and mix together, then add the rest of the sweetener to the other dry ingredients in the large bowl. Add the instant dried yeast and combine by whisking until you have one color.
- 4. In a separate bowl, whisk the eggs, water and vinegar together, then add to the dry ingredients in the large bowl. Mix the the ingredients together until it comes together to form a dough. The let it rest for 5 minutes.
- 5. Oil your hands and knife to minimise the dough sticking, then divide the dough into 4 equal parts. Shape each part into a bun shape. Sprinkle the oat fiber/sweetener topping on top of each bun and place onto a lined baking sheet, then bake for about 30 minutes.
