Keto hot dog buns using an altered version of the oat fiber bread recipe, which is flourless, gluten free and diabetic friendly as it won't spike insulin levels. Hello Hot Dog!
Ingredients
- 70g/ ½ cup + 2 tbsp Oat Fiber
- 50g/ 1/3 cup Psyllium Husk Powder
- 14g/1 tbsp Baking Powder
- 2g/½ tsp salt
- 4g/1 tsp Sweetener
- 4g/1 tsp Instant Dried Yeast
- 3 Eggs at room temp
- 240g/1 cup lukewarm water
- 25g/ 2 ½ tbsp White Vinegar
- 1 tsp Keto Approved Oil
Directions
- 1. Preheat the oven to 350F or 180C.
- 2. Prepare the dry ingredients - To a bowl add the oat fiber, psyllium husk powder, baking powder, salt, sweetener and instant dried yeast. Whisk until fully combined and one color.
- 3. Prepare the wet ingredients - In a separate bowl add the eggs, lukewarm water and white vinegar/apple cider vinegar and whisk all that to combine it together.
- 4. Combine the wet and dry ingredients until fully combined, do scrape down the sides of the bowl occasionally and mix until one consistency, then let the dough rest for 5 minutes.
- 5. Divide the dough into 4 equal parts. Coat your hands with a keto approved oil, then shape the dough into a cylindrical shape to fit your molds, coating the dough with the oil, then press into the molds.
- 6. Bake for about 40 minutes, remove from the oven and let cool.
