I think this is one of the best keto treats I've ever tasted. It's soft and gooey in the middle and maple with pecan is always a winning combination. You could also make bars if you use a loaf tin and get 8 servings.

I think this is one of the best keto treats I've ever tasted. It's soft and gooey in the middle and maple with pecan is always a winning combination. You could also make bars if you use a loaf tin and get 8 servings.

Ingredients
- 70g/½ cup Pecan Nuts, toasted and chopped
- 50g/¼ cup Butter, melted
- 60g/ 1/3 cup Sugar Free White Chocolate Chips
- 55g/¼ cup Sugar Free Maple Syrup
- 1 tsp Vanilla extract
- 110g/1 cup Almond Flour
- 1 tsp Baking Powder
- 37g/ ¼ cup Sweetener
- ½ tsp Salt
- 1 Egg White, whipped to stiff peaks
Directions
- 1. Set your oven to 340F or 170F and grease and line an oven-safe 6.5x6.5 inch or 16x16 centimetre container and set aside.
- 2. Toast the chopped pecans by placing on a lined baking sheet for about 10 minutes.
- 3. Add the melted butter, sugar free white chocolate chips, and melt for 15 seconds at a time until the chocolate has melted, then combine.
- 4. Add the sugar free maple syrup, vanilla and combine all the wet ingredients.
- 5. Add all the dry ingredients, the almond flour, baking powder, powdered sweetener and salt, then combine.
- 6. Whip one egg white to stiff peaks, then gradually fold into the batter.
- 7. Add half the amount of chopped pecans and combine, then add the batter to the container and smooth off.
- 8. Sprinkle the remainder of the chopped pecans on top, then lightly press them into the batter so they peak out.
- 9. Bake for about 14 minutes, halfway through turn the container so the blondies bake evenly. Remove, then let completely cool as it is quite crumbly when still warm.
