Ingredients
- 110g/1 cup Black Chia Flour
- 50g/ ½ cup Powdered Monkfruit Sweetener
- 12g/2 tbsp Unflavored Protein Powder
- 7g/1 tbsp Pumpkin Spice
- 3g/1 tsp Baking Powder
- 2g/½ tsp Baking Soda
- 2g/½ tsp Salt
- 1g/¼ tsp Xanthan Gum
- 1 Large Egg
- 27g/3 tbsp Sugar Free Maple Syrup
- 55g/¼ cup Pumpkin Puree
- 58g/¼ cup Heavy Cream
- For the frosting I used 80g Heavy Cream and 1 tbsp Sweetener which is included in the nutritional information.
Directions
- 1. Set your oven to 320F or 160C. Grease and line a 6 x 6 inch or 15 x 15 cm oven-safe container.
- 2. First create the flour, to a bowl add the ground chia, powdered sweetener, protein powder, pumpkin spice, baking powder, baking soda, salt and xanthan gum to a bowl. Mix to combine until you have one color and set aside.
- 3. In a bowl large enough to fit all the ingredients add the egg, sugar free maple syrup, pumpkin puree and heavy cream and whisk together. You should have a yellow mixture with little lumps of pumpkin.
- 4. Add half of the flour to the wet ingredients and whisk together. Then add the other half and mix until you have a thick batter.
- 5. Add to the line container, filling the corners and smooth off the top. Cover with foil and bake for 30 minutes. Cut into 4 slices, poke holes into each slice with a tooth pick and sprinkle sugar free maple syrup over the slice.
