Amazing Keto Waffle Cones!

Ingredients
- 1 Egg White
- 20g/ ¼ cup Unflavored Whey Protein Powder
- 15g/ 1.5 tbsp Sweetener
- 25g/ ¼ cup Almond Flour
- 14g/ 1 tbsp Heavy Cream
- 14g/ 1 tbsp Unsalted Butter, melted or softened
- ¼ tsp Xanthan Gum
Optional Chocolate Cones
- 1 or 2 tsp Cocoa Powder
- ½ tsp Vanilla
Directions
- . Beat the egg white to stiff peaks, then add the protein powder, sweetener, almond flour, heavy cream, butter and last sprinkle the xanthan gum over the other ingredients so it doesn't bind in one clump. Whisk until fully combined and you may need to scrape down the sides of the bowl to incorporate all the ingredients.
- 2. Meanwhile heat up the waffle iron for 5 minutes. Add one tablespoon of the batter onto the iron, off-center and towards the back of the iron. Slowly close the iron so the batter has time to cook the cone toward the back. I found that the batter can get very thin toward the back otherwise. Depending on your iron, you may need to flip the iron over after 2 minutes so the cone cooks on the other side as well.
- 3. The cone will separate from the iron when it's ready, which is about 4 minutes of cook time. Place the cone onto a board, and using a cone shaper, wrap the cone into the cone shape. Let it cool down completely so that it hardens, then it will keep its shape.
- 4. Continue this process until all the batter is used.
