This low carb Mexican Taco Chicken Recipe is delicious and one of my favorite meal ideas. Serve with cauliflower rice or low carb alternative, avocado and sour cream, or do a shredded chicken version for Tacos.

Ingredients
- 3 x 200g Chicken Breast, skinless boneless
- 2 Carrots, large
- 3 Bell Peppers
Marinade
- 3 tbsp Butter, melted
- 1 tbsp Coriander Powder
- 2 tbsp Taco Seasoning
- 1 tsp Cumin Powder
- 1 tsp Salt
- 1 tbsp Garlic, crushed
- 1 tbsp Lemon Juice
Directions
- 1. Preheat the oven to 350F/176C and place the chicken breast onto a baking tray.
- 2. Slice the carrot and bell pepper into bite sized pieces and add to the baking tray.
- 3. To a bowl add the marinade ingredients and mix to combine, then coat the chicken and vegetables then bake for 30 minutes. The chicken and vegetables may need to be flipped over, then bake for about 30 minutes further.
- 4. Remove from the oven and sprinkle coriander leaves for extra flavor.
- 5. Serve with cauliflower rice or alternative.
