Ingredients
- 2 boxes of sugar free Strawberry Gelatine/Aeroplane Jelly
- 200g/1 cup Strawberries, sliced
- 225g/1 cup Cream Cheese, softened
- 153g/¾ cup Sweetener
- 53g Sweetener
- 249g/1 cup Heavy Whipping Cream
- 360g/3 cups Raw Pecan Nuts, finely chopped
- 113g/1 stick Butter
Directions
- 1. Prepare the Jelly by adding the jelly to two cups of boiling water stir and let it cool while preparing the other layers.
- 2. Prepare the strawberries and pecans and set aside.
- 3. Over a medium heat, add the butter to a pan or skillet and let it simmer for about 10 minutes, allowing the butter to turn amber, then stir in 53g sweetener and the chopped pecan nuts.
- 4. Add the pecan mixture to a greased standard casserole dish and smooth off to create the first layer, then bake for about 10 minutes, and let cool.
- 5. Mix the softened cream cheese, 3/4 cup sweetener and cream together until smooth, then spread on top of the pecan layer, and smooth off.
- 6. Place the sliced strawberries onto the cream cheese layer to form it's own thin layer. Gently pour the jelly liquid over the strawberries, then refrigerate until the jelly layer is solid, about 2 hours.
